Behind The Scenes

P. F. Chang's towers over the other Chinese restaurants in Lexington. It has a much bigger facility, a much bigger menu, a much more elaborate showcase filled with Chinese icons. The slate, wood, metal and earth toned concrete combine with special lighting and 21st Century architecture to create an environment that feels very Oriental to those of us who have never been to China. But it's a different view of China. There's a 12th Century feel to this. There's a huge mural stretching along one wall which depicts 12th Century Chinese life. The terra cotta warrior statues were found in the tomb of Qin Shi Huangdi in the First Dynasty. The huge 11 foot tall horses were also part of that era.

Whatever the architecture, this is a huge facility. There is a bar (right), one patio off the bar (below) and a larger one off the restaurant, There are tables and booths, a high ceiling and enough distance between everything that conversation is possible.

Chang's also overwhelms Lexington rivals with its menu. It's five pages long and they're 14" pages. Long menus --- usually over 100 items --- are a Chinese restaurant tradition, but Chang's somehow manages to offer several items not seen on any of the others. It also takes a different approach to taste. Various Chinese restaurants specialize in one of the country's geographic regions : Hunan, Mandarin, Cantonese, Shanghai, Hong Kong, etc. But Chang's packages itself as typical of 12th Century China. Never mind the fact that almost no one in America can judge the accuracy of this claim. Nevertheless, it's an interesting concept, and it produces some fascinating tastes. And whatever century we're in, we must be near the coast, because Chang's offers more seafood than any of its rivals. And that seafood is exquisitely well prepared. The Lemon Scallops and Ginger Steamed Salmon may be two of the finest seafood dishes currently being served anywhere in the city. There's a Menu For Two which even includes dessert and at $40 is a steal. One whole page of the menu lists gluten free items. There is a very extensive wine list with a special sampler : For $10 you can order three 2.5 oz. glasses of any wines on the list.
